邵鵬柱教授畢業於英國倫敦大学學帝國學院,獲頒哲學博士學位。邵教授現職中醫中藥研究所副所長、李達三葉耀珍中醫藥研究發展中心主任、生命科學學院教授及生物化學課程主任。他亦獲委任為香港特別行政區漁農自然護理署保護稀有動植物諮詢委員會主席及暨南大學客座教授。邵教授至今培訓了超過50名博士研究生,出版了220多篇經審查出版之期刊論文、3本學術書籍,並擁有四個美國和四個中國專利。
